UNICO ROSA SPRITZ
This combination swaps traditional Italian bitter notes for a celebration of native Australian botanicals. Unico Zelo’s Unico Rosa Vermouth uses a vibrant base of skin-contact Pinot Gris and juicy Grenache infused with wild Rosella flower, sharp Davidson plum, strawberry gum, and wormwood. Layering this complex, “watermelon sugar” flavored pink vermouth against the bone-dry, electric green apple and lime crunch of the Troppo Blanc de Blancs results in a highly aromatic, zesty, and incredibly refreshing modern spritz.
Ingredients
- 60ml (2 oz) Unico Zelo Unico Rosa Vermouth
- 90ml (3 oz) Unico Zelo Troppo Blanc de Blancs Sparkling (well-chilled)
- 30ml (1 oz) Premium soda water (to open up the native aromatics)
- Garnish: 1 fresh strawberry (halved) and a strip of lemon peel
- Ice: Large, solid ice cubes
Step-by-Step Instructions
- Prepare the glass: Fill a large, stemless or traditional wine glass completely with fresh ice.
- Pour the vermouth: Measure and add 60ml of the pink Unico Rosa Vermouth over the ice.
- Top with bubbles: Slowly add 90ml of Troppo Blanc de Blancs down the inner wall of the glass to keep the fine, zesty carbonation alive.
- Lengthen the drink: Splash in 30ml of crisp soda water.
- Garnish and serve: Express the oil of the lemon peel over the top of the drink and drop it in. Slide the fresh strawberry halves into the glass, give it one gentle, quick lift with a bar spoon, and enjoy immediately.
