Double Cask DC121’s youngest component was aged 7 years, and its oldest component was aged 18 years. Maturing in a combination of French and American oak, DC121 was bottled at 47.3% and yielded 1,295 bottles.

This exceptional single malt whisky marries the distinctive qualities of French and American oak casks in every small batch. Adorned with both tropical and stone fruits, sweet notes of caramel and vanilla, spices such as cinnamon and nutmeg, plus nutty, floral and herbal nuances that all contribute to the intricate flavour profile. Double Cask offers unparalleled complexity and length, a testament to
its meticulous craftsmanship.

NOSE
Crisp and open, with a broad structure that balances lightness and depth. Sour apple and sherbet give a fresh lift, underpinned by lactic notes of buttermilk and soft vanillin.
There’s a subtle savoury edge – smoked salmon, sweet brine, and caramel syrup – that drifts into salted caramel profiterole, fig syrup, and dates.
Rose water and Turkish delight bring floral sweetness, offset by rosemary, fried shallots, hay bale, and toasted grains. An intricate, shifting nose that moves from bright and tangy to warm and savoury.

PALATE
The palate is creamy and juicy, with a rounded, chewy texture that fills the mouth completely. Savoury spice leads, joined by cocoa powder, dark chocolate and orange, and a hint of raspberry tart.
Burnt butter and sage lend depth, while lemongrass an white pepper bring energy and lift.
Smoked mussels and brine echo the nose, grounding the sweetness of waxy honey and orange poppyseed muffin.

FINISH
Long, gripping, and generous, carrying a powerful wave of flavour.
Rich caramels and brown sugar merge with toasted pink marshmallows, roasted hazelnut, and maple-drizzled pancakes.
There’s warmth and spice – banana, custard, fruit cake, and Christmas pudding notes that continue to unfold.
The structure is dense but harmonious, leaving sweetness, warmth, and gentle savoury weight.
