Troppo Blanc de Blancs – This expression is a bone-dry, Charmat-method Chardonnay sparkling characterized by an electric green apple tang, lime zest, and intense minerality. When layered against the lush strawberry, wild rose, and ginger notes of Cocchi Rosa, the sharp citrus and taut dryness of the Blanc de Blancs cleanly slice through the aperitif’s honeyed texture, resulting in a much crisper, highly refreshing, and focused spritz.

- 60ml (2 oz) Cocchi Rosa
- 90ml (3 oz) Unico Zelo Troppo Blanc de Blancs Sparkling (ice-cold)
- 30ml (1 oz) Premium soda water (strictly to lift the citrus aromatics)
- Garnish: 1 wide strip of lemon peel and a fresh basil sprig
- Ice: Large, hard-frozen ice cubes
Step-by-Step Instructions

- Chill the glass: Fill a large wine glass to the top with high-quality ice cubes.
- Measure the base: Pour 60ml of the ruby-hued Cocchi Rosa over the ice.
- Pour the bubbles: Slowly top with 90ml of the Troppo Blanc de Blancs, leaning the glass slightly to preserve the wine’s fine, zesty carbonation.
- Add the lift: Splash in 30ml of cold soda water.
- Express and wake: Express the essential oils of a lemon peel twist across the rim of the glass and drop it in. Lightly smack the basil sprig to release its aroma, tucking it right next to the straw.
- Stir gently: Give the drink one brief, gentle lift with a bar spoon to integrate without deflating the bubbles.
