We think you’ll agree with us that summer has started early in the city this year and last couple of weeks felt like a heat wave.
Here are some reds that we would recommend chilling to between 10-16C (or 30 mins in the fridge) for your sundowners or with lighter meals. You will find reds with lighter tannin can be enjoyed this way; some lighter Pinot Noir, Dolcetto, Syrah/Shiraz that haven’t had much oak treatment and some Nero as well.
We have tried and tested some of these (including carrying a bottle up the Twins and then plonking it into a bucket of ice while plates of delicious food arrived along the water front of Stanley). So give them a whirl and do let us know what works for you.
P.S. can you chill your full bodied Cabernet? Yes, why not and maybe around 18C will do.
